A lot of corn bread was made and consumed during the American Civil War because it could be made in different shapes and sizes and it did not cost much to make.
Cornbread is a staple in the South and in Southwestern states and it is often enjoyed crumbled into buttermilk and eaten with a spoon in certain areas in the south. Cornbread with honey or with pinto beans used to be a popular children’s lunch in the mid 1900s in rural areas of the South. Crumbs made from cornbread can be used to make the stuffing for thanksgiving turkeys.
Corn bread can be salty or sweet but in the South, it tends to be saltier than Northern versions. Mexican cornbread with jalapenos, grated cheese, and creamed corn is especially popular in Texas but this version of corn bread is also made all over the United States because it is delicious and goes so nicely with authentic Mexican food recipes.
Recipe for Authentic Mexican Cornbread
This delicious recipe is very easy to make. You can use cheddar cheese rather than a Mexican blend if you prefer. The jalapenos add a kick to this delicious Mexican recipe and the finished corn bread will be soft and flavorful.
What you will need:
- 1 cup cornmeal
- 1 cup all purpose flour
- 1 cup grated Mexican blend cheese
- 1 cup creamed corn
- 1 cup buttermilk
- 2 eggs
- 1 teaspoon baking powder
- 3 diced jalapenos
- 4 oz jar sliced pimientos
- 3 tablespoons white sugar
- 4 tablespoons melted shortening
- 1/2 teaspoon baking soda
How to make it:
Mix the cornmeal with the buttermilk and let this mixture stand for half an hour. Preheat the oven to 375 degrees F. Stir the flour, cheese, corn, eggs, baking powder, jalapenos, pimientos, sugar, shortening and baking soda into the buttermilk mixture, then transfer it to a greased 13 x 9 inch pan.
